Dandelion

Root, leaf, and flower — the whole plant is edible. Even the ones in your lawn.

Taraxacum — the whole plant, edible

You've pulled a thousand of these out of your lawn. The joke is on you — the root, the leaf, and the flower are all edible.

What each part gives you

leaf bitter greens, best young in spring
flower petals in fritters or a bright syrup
root roasted and ground, a coffee substitute

How to pick

Young leaves before the flower opens are mildest. If it's in a sprayed lawn, leave it — go find one in an unmanaged corner instead.
